What is the role of Angostura bitters in the Figgy Thyme cocktail?

Angostura bitters add depth and complexity to the Figgy Thyme cocktail by balancing the sweetness of the figs and honey with a hint of aromatic bitterness. This contrast enhances the overall flavor profile, making it more sophisticated.

How can I make a non-alcoholic version of the Figgy Thyme cocktail?
